Here's the result of some experimenting with rotten flesh tones. From now on my rule of thumb: the more decomposition, the farther away from pink flesh. Mostly I was trying to distinguish zombies who had just turned from the living and those that had been dead for some time ere coming back to life ...
The gravestone is from the Woodland Scenics gravestones set in HO Scale.
