Kreoss and Feora are the two most seen, but I don't quite understand the way these players are using the armies.

hmm, you got to be more specific: do you mean epic Kreos and Foeora, or the "normal" version
the normal Kreoss, for example, is maybe the perfect warcaster for beginners imho: He can buff his guys, destroy enemy upkeep spells or make them more expensive, got a great direct damage spell and one of the best feats in the game AND he is a decent beatstick - he´s a bit like a swiss army knife , and you can try alot of differnt tactics -usually when i saw him played, he stood right behind the front troops, opening charge lanes for them with his DD spell ( by chanelling tehm through a guardian ) and keeping the opponent from casting spells on them that would keep them from fighting. Another great tactic is to take 2 full units of deliverers, get as many enemy troops in his control area as possibly and drop the feat - every missile will hit , usually ending the game - a bit boring if you ask me.
the epic Kreoss - well i only played him once and lost to unbelievable bad luck , but he´s the caster if you want to play a knight exemplar theme army , or when you´re facing a lot of cryx players since he makes corrosion useless.
Feora is popular because she´s an expert in annhilating enemy infantery - and most army list in Mk 1 tend to be infantery heavy.
Epic Feora is so popular because if you set something on fire it will get Damage 14 isntead of 12 wich is potential lethal even to shield wall infantery , most solos and even light warjacks and beasts.

I get the fast attack plan, but I don't get the mad rush, smash and blast, that seems best suited for Khador or Cygnar.

many Protectorate players i know play rather defensive: Reedemer on a hill, Choir of menoth close to it, so the reedemer gets the bonus for attack and damage Rolls , and then they just try to burn as many troops as possible- last tournament i saw half a legion army burned alive before they could even do something to the menoth army.

I play Menoth because they seem more like the Eldar than any of the other armies, and after playing with Severius from the beginning, back in March, and playing them as I do my Eldar, I've been rather successful using tactics and maneuvering.
Is it a common trait among Warmachine players as a whole? Or is it a common thing among gamers, that I am only now picking up on?

Well, Warmachine is a very aggresive game, if taht´s what you mean, and it favors a certain style - but manouvering is important in my eyes , especially for menoth players who always have to make sure that theyre troops are psostioned in a way that makes sure that they benefit from all the effects menoth has - if you have success with playing them like eldar , then play them like eldar, why change a running system
sorry that´s really all i can tell you from my perspective - if you need more , you shpoudl try the PP forum
