I think the flickering of blood on his arm looks nice and than you generally did a good job. I have recently finished a butcher myself and know they can be quite tricky. I am close to giving you a 6 but since the base isn't complete yet my hand is forced, and you get a 5.
Keep up the good work. I am not a better painter than you so I know it can always only get better...
