Since giants take 1 wound for every 2 unblocked hits, do you round DOWN?

Example: Giant takes 7 hits, saves 2, there are now 5 unblocked hits....does that equal 2 wounds?

Yes. But keep in mind any effect which does wounds (Precision etc) will just deal a wound to them.
