Not quite Turkey day in my part of the world, but getting closer.

Of course, I'll just be spending the day alone, probably doing laundry and working on projects.

Anyway, hope everyone has a very nice holiday (for those that are partaking of it).

It's not actually the 26th yet, but my church just had our annual Thanksgiving service so it might as well be, though!

Freedom from depression, a regular paycheck, new opportunities...yeah, Thanksgiving is the right word.

Twice baked potatoes?? do tell more, how/why do you bake them twice?
what does that do to them?

Twice Baked Potatoes are legendary.

First, find the biggest potatoes you can find, clean them and coat them in a little bit of oil.
then you bake them the first time, until they are done and crispy on the outside.

let them cool, then cut them each in half, lengthwise, and scoop out the insides, you should then have a shell and a big ole bowl of potato.

You then mash the potatoes adding in the following ingredients

- cheddar cheese
- parmesan cheese
- blue cheese
- cream cheese
- heavy cream
- butter
- sour cream
- salt
- pepper
- garlic salt

then you take this delicious filling and add it back to each of the shells. Top with cheddar and parmesan cheese and bake for the second time until the tops are golden brown and the filling is heated through.

thus, twice baked potatoes.

Roger had his 1st Thanksgiving today.......sort of. We're actually combining my son's birthday and Thanksgiving on the 2nd and have a Thanksbirthbay.

The best bit about Thanksgiving is the leftovers....

Nothing beats a cold turkey and cranberry sauce sandwich!

I'm thankful for lots of things in my life, and the folks here on CMoN are a part of that.

@Mick - yeah, I'm thinking of adding white cheddar next year ;)

and yes, theres a whole lot of heart attack going on in those potatoes, but it's thanksgiving, isn't that the point?

@Vike - mmm, that is one of my favorite bits of thanksgiving. of course, this year its paired with a heavy amount of classwork, but at least the lunch is delicious!

@mud duck - liz wins the cute title hands down! I didn't even think that was a contest :)
