I think you meant distilled water. With mineral-water painting would be an uphill battle. :)

The whitening I've only seen with the new GW washes (especially nuln-oil), not with old ones, not with washes of other companies and not with paints in general.

I haven't experienced this personally but the water sounds a likely culprit, I know some people only use mineral water for painting but I've never had a problem with tap water, but tap water can vary based on location, you can try using just medium and see if that helps? If it does maybe invest in some mineral water for painting with or stick with just using medium instead

I'm not sure about mineral water, but I can vouch for distilled water. And if you're the sort who likes or needs to iron your clothes, you should be using distilled water in your iron too! Using tap water usually leaves a calcium buildup in irons... But that's a little off topic.

I've since switched to just using a glaze medium to thin down my paints. I typically use a wet palette, so my paints get all the "extra" water they need through the parchment paper. I found that just mixing in the medium tends to keep the paint more consistent over longer sessions.
