Sculpting fish

Alrite guys, am working on my first couple of water bases and iv been thinking about things to add to make them more interesting and obviously one of the first things that come to mind are fish, but how do u go about sculpting them?

my first thought was to sculpt one half then turn it over and match it on the other side...

any easier ways?

Never done one but working over a thin cutout of plastic card or rolled putty strikes me as the best general approach, mounted onto a wire of some sort to have it standing away from holder or surface.

Might be best still to work on one side at a time but as with a face I think it would be preferable to see both side during sculpting (although with the level of detail necessary for something like this probably no need to get that anal).

I did the two-halves thing for my hippocampus base because I wanted them to be dangly (I glued invisible thread between the two halves). Not sure that it produced the best visual result, though. I think doing what the others have suggested and sculpting the whole thing would probably look better.
