So I\'m going to try the VMC Matt Varnish, any thoughts on this varnish?

Should it be thinned and can I use water to thin it?

yes, and you can put it between layers i have found as well as mix it with paint. its does what any regular matt varnish should do also. makes things matt. most of the time. actually if you water it down too much it would make it matt, it will dry kinda shinny i have found.

I have tried in on one minature and I didn\'t water it down. Seemed to work pretty good, Iuse mostly matt paints so I couldn\'t really see a big difference

I would reccomend watering it down. It works great but at full strength I\'ve seen it form bubbles that really stand out when dry.

You can increase the mattness by adding VMC (or equivalent) matte medium. I don\'t have the matt varnish, but recently I acquired a good, matte finish by using satin varnish and matte medium (and a little water).
