The babà is a cake difficult but not impossible to prepare in house. To two conditions: to possess a good endowed paste machine with hook whip (in contrary case, is necessary to be disposed to one working of the paste much longer than that one with machine) and to use one flour of optimal quality. Difficulty: High. Time of preparation: 45 minutes more cooking time. Kitchen Instruments required: One paste machine equipped of hook whip, one bowl in order to prepare leavens, one larger bowl for the paste and the levitation, one score of babà stamps, a little pot in order to prepare the ruhm bath. Ingredients:
220 grams of flour
12 grams of leaven of beer
3 eggs (if much large, two eggs are sufficient)
70 grams of butter
30 grams of sugar
a bit of salt
flour and butter for stamps

For ruhm bath:500 grams of water
200 grams of sugar
the peel of a lemon not chemical-disinfected
Procedimento:preparare \"leaven\" pasting twelve grams of leaven of beer, a water spoon, 25 gr of flour and a teaspoon of sugar. Leave to leaven until is not doubled of volume.
