Another thing I like to do is make a large batch of Marinara sauce. You can find all types of recipes for it on the interwebs.

I like this one minus the carrots and a little sugar to cut the acidity. (Damn you, chronic acid reflux, Damn you to hell)

Make a large pot, put it into several ziplock baggies and freeze them. When you need a quick easy meal, you can take out one of the bags, defrost it in the microwave or under hot water. Pour it in a pan with almost any meat (shrimp, mussels, chicken) and serve over rice or pasta.

The funny thing is my ancestry is Welsh/American Indian. I mainly cook Italian because the cream sauces are filling and not too rough on the acid reflux.

Here\'s one that takes a bit more time:

1kg shelled green prawns
1/2 bulb garlic
oregano, thyme, parsley
any veggie oil
olive oil

Finely shred herbs. Finely chop garlic. Throw them together in a large bowl with the prawns.

Mix up an equal portion of veggie oil and olive oil, enough to completely immerse the prawn and herb mix.

Marinate prawns in the oil mix overnight.

Whack the prawns on the barbie. Or panfry. Or grill. You won\'t need any oil, and prawns will take only about 2 mins on either side.

Save the left-over oil marinade for cooking something else.

Well, there\'s always Potatoes Steelcult -
Which just happens to be cooking at the moment -

One Large or 3 small potatoes (enough when cubed to fill a 12 in frying pan)

1lb Sausage

Two cloves garlic

Half a small onion

One 12 oz can diced tomatoes

Black Pepper to taste

Worschestchire Sauce to taste

Basil, Oregano, and Dill Weed to taste


Cube potatoes, crush the garlic, dice the onion and put in frying pan with enough oil to moisten the pan - simmer until potatoes and onion are soft, then add the tomatoes, spices, and sausage - allow to simmer until broth is almost gone.

Boil some new potatoes and boil them for a little while

get some asparagus and boil them for a tiny while.

get an inch thick tuna steak... on a griddle with some butter on it. cook it just like a steak, sprinkle some sea salt on it and a little ground black pepper (not the fine stuff but grind up some pepper corns).

Stick it all on a place and eat... takes about 25 minutes tops.

These are all very good but most seem to be a bit time consuming.... I have an ultra quick one and ultra easy one.... which might satisfy those with strange / interesting tastes for lunch or a snack.

Ingredients:

Baking potato
Mozzarella cheese
Jar of cranberry sauce

Pierce the potato and stick it in a microwave for about 5 or 6 minutes (depending on microwave power and potato size). While it is cooking grate the cheese.*

When the potato is done cut it open and add the cheese which will melt and the cranberry sauce. Done in 6.5 minutes or so. To get a nicer baked potato you can do the last bit of cooking in the oven (but then that increases your time).

* You can get all sorts of mozzarella but make sure you get the type that is for pizza and can be grated rather than the fancy one that comes in water (it doesn\'t melt properly and you are left with a not nice wet potato as I learnt from experience!).
