Quick recipes (for food)

Hi guys and gals! following the best sandwish thread that made me all hungry... :)

What are your best recipes for quick cooking? I need to expand mine and are open to... most suggestions.

My universal recipe right now:

2 dl of macaronies in some kind of cooking.. vessel. Preferable not a frying pan. Cover the macaronies just about with water and add a pinch of salt. Let most of it boil away and then apply margarine/butter, let it melt and then milk, again make it just about cover the macaronies. Let it simmer for a while and add sprinkle on some Maizena or ideal flour. Then just add any leftovers from the fridge right into the pot, could be meat, a stew, chicken etc. I usually do it with chicken though and than I add thyme as well. It\'s done once all the runny stuff is gone and it\'s almost solid! ;) Serve with Heinz ketchup.

Takes about 15min

Minestrone Hamburgers
- 2 lbs. ground meat
- 2 Cans Progresso Minestrone Soup
- American Cheese slices (Kraft, Velveeta)
- Hamburger buns

Brown ground meat, drain, add in soup.
Let simmer until the consistency of a sloppy joe.
toast buns slightly, add mix to bun, top with cheese.

Much like a sloppy joe with a heartier, meatier taste. Not tomatoey though.

Grilled chicken wings - salt and pepper them on both sides, whack it into the grill or BBQ, 7 minutes or so on either side. You\'re done in 15 minutes or so.

Grilled salmon - salt, pepper, dill, and lemon juice on either side of a fillet of salmon (or steak, whatever takes your fancy). Grill or BBQ, about 5 minutes on either side (depending on thickness). You\'re done in 15 minutes or so.

Dessert - cut out a square of puff pastry. Finely slice an apple and arrange what the slices on what fits on top of your pastry square. Brush with eggwash. Toss in oven at 180 degrees C for 10 minutes or until golden brown. Dust with castor sugar or drizzle with honey.

I could go on and on :). Magic things you can do with just salt and pepper.

BBQ Ribeye steak-

Get two steaks cut at about 1\". Western Canadian \"AAA\" for best results.

Put on a hot grill then reduce heat immediately. Hot grill but low flame. Add some steak seasoning (Saskatchewan Steak spice from JB Sausage supplies if you live in Canada). Flip them after 10 minutes. Once flipped add some BBQ sauce if you like. I like Gordo\'s grilling (again, you have to be blessed enough to live in this great country to get it). 10 minutes to go.

Eat.

For dessert? That\'s why you cooked two steaks.

Cooked about 5 minutes too long on both sides.:D

Liz\'s Greens

6 bunches collard greens
6 bunches mustard greens
1 pound bacon ends and pieced, fat pulled off and kept for something else, lean cut fine
1 small onion sliced
1 clove garlic crushed
1 dried red chili
2 whole cloves
Olive oil

cook bacon lean in olive oil, add onions, garilc and spices. Cook untill onion is soft. add handfuls of wet washed greens, filling pot and covering, then filling again untill all are in pot (start with the collard. They\'re tougher). Add a bit of water if needed (probably not). Stir occassionaly while letting simmer for an hour.

Serve with fried chicken, corn bread amd tabasco.

I\'m with Scott. A balanced meal in Alberta is a steak on one side of the plate, and an equally large steak on the other. Perhaps some potatoes or something in the middle :p

Anyway my favorite self-cooked meal:

Boil up some Shanghai noodles.
Pan-fry 1-2 chicken breasts (personal taste, I use two).
Add chopped veggies to the chicken (I prefer thinly chopped red peppers and thickly grated carrots).
Add Thai sweet chili sauce and chopped almonds/whole salted cashews to the pan (either one works a treat).
Drain noodles and mix it all up.
Devour.

Serves one hungry gamer.

my favourite any piece of meaty fish .. lay it on a pieceof foil approx 3 times the size of the piece of fish .. slice some onions thin , some tomatoes thin , any other vegetables that take your fancy just slice them thin. sprinkle with a little olive oil , salt and black pepper add a squirt of lemon juice or white wine .. seal the foil ove the fish like a parcel and stickin a hot oven 5-10 min\'s max open the parcel and enjoy the steamed goodness.....

Shrimp Florentine (Evil Dave Style)
- A dozen Jumbo butterflied shrimp
- Fresh Spinach
- Butter (real stuff)
- Heavy Whipping Cream
- Minced Garlic
- Lemon juice or white wine
- Salt
- Pepper, white and black
- flour - white
- Olive oil
- Italian Seasoning/ Season All/Tony\'s
-Cooked Fettuccine

-Tomatoes, Mushrooms optional.


Add seasoning to flour, dredge shrimp in flour and pan fry in shallow pan.
When shrimp are golden brown take the off and place on fettuccine.
Drain off olive oil, but leave the flour from the shrimp on the bottom of the pan (this acts as a roux) pour in a dash of lemon or white wine to loosen this up.
Put in spinach, garlic (Mushrooms and/or Tomatoes at this point) and saute it for a few minutes.
Dollop in Butter and a bit of heavy whipping cream. (just enough to cover the bottom. it takes a while to get use to how much)
Keep stirring (or if you\'re good, and I am, you can simply flip it in the pan. WARNING: This takes both practice and skill as well as the right kind of pan, do not blame me if you get burned) Keep folding the cream until it gets to a golden creamy texture .
Pour cream sauce over shrimp on fettuccine, add salt and pepper to taste.
Voila.

It sounds like it take forever, but if you have the ingredients on hand, shrimp take only a few minutes to pan fry, spinach will cook pretty quickly as well, the more heavy cream you put the longer the wait for it to fold into a cream.
Back when I was a cook I could do a four top of this in easily 10 minutes.

Or...
Chicken legs with the skin on, roll in flour and pan fry in olive oil and butter over the hottest flame to crisp up the skins, then add rosemary, pepper, a load of finely chopped garlic and a glass of white wine.
Cover and let simmer on a low flame until the white wine sauce has thickened (about 20/30mins or so). MMmmmmm.

I can also do a fantastic lamb shoulder and potatoes (which takes about 3/4hrs so not quick) but unfortunately I haven\'t been able to find a lamb shoulder half as good in Newcastle as the one\'s I could buy in Spain.

I also make spot on veggie lasagna\'s and pizza\'s with home made dough, but again, they tend to take a while.

FISH!

I ate so much good fish when living in Spain it\'s surprising I can\'t breath underwater.

Nothing more satisfying food wise than gutting out a fresh fish and stuffing it with lemons and garlic then watching it cook over a BBQ and popping the eyes out!

Another quick one...Gambas Pil Pil, take a small pan and fill it with about 20mm of olive oil and loads of chopped garlic and chilli, when the oil is hot enough fill with prawns and simmer until cooked. Serve straight away with loads of bread for dipping in the oil.

I\'m getting hungry now!

Anchovies cold in a garlic oil...
Mussels in a tomato sauce...
Salt cod and Allioli...
Patatas Bravas...
And very simple, bread with olive oil, balsamic vinegar and salt.

rofl. for me, the steaks would be starter and main. for desert, chop up some bananas and place in foil packets with a generous amount of demerera sugar and place on the (now cooling) barbie. when you have scoffed you steaks, they should be done. lovely as they are, you can also add ice cream/cream/drambuie if you want

for my fave quick food, get 2 duck breasts, score the fat and place skin down in a hot skillet/frying pan. cook till its brown then turn, draining off excess fat as you go (this can be kept and used for nice roast potatoes). then do the other side.

for the sauce, get a load of morello cherry jam in a saucepan and add some red wine. reduce while the breasts are cooking. eat with veg and roast potatoes

How \'bout fried steak or chops, mashed potatoes, steamed broccoli and glazed carrots? Yummmm!

Should only take about 12-15 minutes including prep, if you have everything on hand.

Ingredients:

Chicken breast
1 red or yellow (orange if you really want to mix things up lol)
1 onion (fairly medium)
2 carrots
large handful of button mushrooms (or bigger, whatever floats your boat)
noodles just over a handful per person
teriyaki sauce
soy sauce
fish sauce
seasame oil

Frying pan (or a wok if you are posh)
Normal pan (for boiling the noodles)


Get frying pan. Put a big splash of oil in the frying pan, then put the onions in untill they are browned. Put a splash of each of the sauces in, then another splash of soy sauce. After that chuck all of the other veg in. After 10mins push the veg aside in the pan and add the chicken (shred it first, so its in chunks/strips)and at the same time start cooking the noodles (the instructions should be on the side of the packet). Add another splash of each sauce and cook the chicken untill its a bit caramelised.

Drain the noodles, then put the noodles on a plate, then put the chicken and veg ontop of that. Eat it !

Stop this madness!!! It is to late for me to cook anything! Now im really hungry!

Bacon n eggs... you just need bacon and eggs, then go to town in a frying pan!

Or Falukorv avelorn, thats always easy to make! Or findus :D just pop \'em in the microwave for 7-10 minutes and blawaooh you got dinner! Karins lasagne from familjen dafgård is perfect, :)

Chicken chili (may be off, working from memory)

2lbs chicken breast, cubed
1 pkg chili powder
1 can corn
1 can red beans
1 can diced tomatoes

Cook the chicken with the chili powder in a pot until done. Add the three cans and heat until hot.

That\'s about the fastest recipe I know.

Chicken Fettuccine - Evil Dave Style
Serving for one

- chicken breast - cubed
- Mushrooms - Sliced
- Red Bell Pepper - Diced
- Green Onions - Diced
- Heavy whipping Cream
- Butter
- Minced Garlic
- Spices (All Spice, Season All, Tony\'s,
Pepper)
-Fettuccine Noodles

Put chicken, garlic, Bell Pepper, onions and Mushrooms in a shallow pan. ( with a dash of olive oil to reduce sticking.)
Cook until chicken is cooked through. add spices to taste at this time.
Pour in heavy whipping cream and butter.
Fold until you get a nice creamy sauce.
Pour over cooked Fettuccine.

Alternate:
You can also use Shrimp, however, since shrimp is much more expensive than chicken, I also like to throw in cubed tasso (<--recipe linky) to give it more meat. More Mushrooms could also be substituted.

Some like to put grated Parmesan cheese on this as well.
