Hmm... I admit I don\'t cook much, and when I do, it tends to be of the \"stir fry random things in a sauce made of semi-random quantities of soy sauce, ginger, sesame oil and peanut butter\" variety - pretty \"empirical\". Anyway, here are two recipes which are good for entertaining:
1. Mango Salsa
2 ripe mangoes - peeled, pitted and chopped
1 large serano chile, minced (or some other chile/hot sauce to taste)
1 small onion, minced
1 large clove of garlic, minced
Juice of 2 limes
Salt & ground pepper to taste
Combine all ingredients in a bowl. Store in a sealed container in refrigerator.
Yield ~ 1.5 cups
2. Basic Brownies (no-nuts for us allergic types)
Components:
2 oz (2 squares) unsweetened chocolate
1/2 cup butter/margarine
1 cup sugar
2 eggs, beaten
3/4 cup flour
1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
optional: 1 cup peanuts or 1/2 cup white chocolate chips
Melt chocolate & butter together in a double boiler. Remove from heat and mix with other ingredients in a medium sized bowl. Add peanuts or chips last and mix in well. Put in a well-greased 9\" square baking dish (preferably Pyrex glass) and bake at 350\'F for 25-30 minutes, testing done-ness with a toothpick.
