This is looking so good!
I've used diluted Evo-stik weatherproof wood adhesive (from Homebase) to stabilise plaster. You dilute it down with water and let it soak into the plaster once it dries the plaster should be less crumbly. I've also used superglue for smaller areas. It soaks right in & sets like rock but it's a process fraught with peril & fumes so I wouldn't recomend it for such a large area!
